This is the kind of hospitality I love finding when I travel. 🍷🇫🇷

Franck-Lin Dalle welcomed our group to his w**ery in southern France and personally took care of us throughout the experience.

We walked the vineyards, tasted the w**es, watched the sunset over the vines, and then sat down for dinner prepared by his sister.

Afterward, we stayed right there on the estate, surrounded by vineyards.

The w**e was excellent.

The setting was beautiful.

But the way we were welcomed is what I’ll remember most.

For me, that’s what great hospitality is about.

People often ask what makes our w**e and gastronomy tours different.

This photo is the answer.

It's not about checking w**eries off a list.

It's about sitting across the table from the people who make the w**e. Sharing a meal. Asking questions. Hearing stories that have been passed down through generations.

When you meet the family behind the bottle, everything changes.

The w**e has more meaning.

The food tastes better.

The place stays with you long after you return home.

The best restaurants in Italy aren't found on a map. They're discovered through relationships. 🇮🇹

This is Al Grop in Friuli.

No tour buses.

No tourist menu.

No crowds chasing the latest Instagram trend.

Just handmade pasta, wood-fired cooking, incredible local ingredients, and generations of tradition.

Most restaurants don't have a recipe problem. They have a foundation problem.

I've walked into kitchens where the answer to every challenge was:

"Add more cheese."

"Add more salt."

"Use a stronger seasoning blend."

But memorable food isn't created by making everything louder.

It's created by building depth.

Depth comes from understanding the fundamentals:

• A stock that's been treated with patience.
• Proper caramelization.
• Acid used with purpose—not as an afterthought.
• Anchovies that disappear into a sauce but transform it.
• Aged Parmigiano Reggiano adding complexity instead of simply salt.
• Mushrooms contributing natural umami instead of relying on artificial flavor enhancers.

These techniques don't just make dishes taste better.

They reduce waste.
They simplify menus.
They improve consistency.
They create a better guest experience.

That's why when I work with restaurants, I rarely start with recipes.

I start by teaching chefs and kitchen teams how flavor is built.

Once a team understands that, they stop chasing trends and start creating food people remember.

Whether you're running a neighborhood café or a fine dining restaurant, the principle is the same:

Great kitchens aren't built on more ingredients. They're built on better fundamentals.

Most people think olive oil tastes different because of the brand.

The real differences begin long before the oil reaches the bottle.

In Puglia, you can see the story from the airplane. Before landing in Bari, miles of olive groves stretch across the landscape. Puglia is not simply one of Italy’s olive oil regions—it is the country’s olive oil engine.

But Puglian olive oil does not have one universal flavor.

The bold, bitter and peppery oils associated with northern Puglia often come from the native Coratina olive. Harvesting the olives early, while they are still green, helps preserve the intense aromas, bitterness, pungency and naturally occurring phenolic compounds.

That peppery sensation at the back of your throat is not necessarily a flaw. In a fresh, properly made oil, it can be a sign of the olive variety, early harvesting and quality production.

Travel farther south and the flavor changes. Native varieties such as Ogliarola Salentina and Cellina di Nardò can produce softer, fruitier and more almond-driven oils.

Puglia even has five protected DOP olive oil zones.

Think of it like Burgundy: one region, many different expressions.

This is why reading the front of a bottle is not enough. An Italian name or flag does not guarantee that the olives were grown in Italy. You need to understand the origin, producer, olive variety, harvest and extraction process.

On our chef-led journeys, we do not just taste olive oil.

We walk through the groves, meet the producers and taste the oil where it was born.

At Masseria Amastuola near Taranto, you can wake up surrounded by olive trees that have been standing for hundreds of years.

It does not feel like staying at a hotel.

It feels like sleeping inside the story.

That is the difference between consuming a product and experiencing a place.

One of my favorite parts of visiting a w**ery is starting in the vineyard.

Walking through the Martinenga Vineyard at Marchesi di Grésy reminds you that every great bottle begins long before harvest. It begins with the land, the people who care for it, and generations of knowledge passed down over time.

When you stand among the vines before tasting the w**e, you gain a completely different appreciation for what's in your glass.

That's why I love bringing people here.

One of the things I value most when traveling through w**e country is spending time with the people behind the w**es.

At Pico Maccario, we weren't just welcomed into the w**ery. Stefano, the w**emaker, personally showed us around and shared the passion, decisions, and craftsmanship behind every bottle.

Those moments are what stay with me long after the trip is over.
