Marinated vegetables are one of those fridge staples that seem to get better with time.
Combine:
• 1 pint cherry tomatoes
• 1 cup mozzarella pearls
• 1 bell pepper, sliced
• ½ cucumber, sliced
• ½ cup olives
For the dressing:
• ¼ cup olive oil
• 2 tbsp red wine vinegar
• 1 garlic clove, minced
• 1 tsp Italian seasoning
• Salt and pepper to taste
Add everything to a Le Parfait jar, shake gently, and refrigerate for at least a few hours before serving.
Perfect for picnics, cookouts, easy lunches, or snacking straight from the fridge.
