Pavlova
What we need~
6 Egg Whites
1/2 teaspoon of Cream of Tartar
1/3 cup of powdered erythritol
1/2 teaspoon of Vanilla Extract
Keto Meringue Topping Ingredients
1 cup of Heavy Cream
1 teaspoon of Vanilla Extract
1 tablespoon of granulated Erythritol
1/4 cup of Unsweetened Shredded Coconut, toasted
What to do~
Preheat oven to 100C/210F.
Place egg whites into a stand mixer and whisk on high until they are foamy. Using a stand mixer is great as it keeps your hands free to add ingredients and scrape down the bowl.
Turn the mixer off and add the cream of tartar. Turn the mixer on low to medium speed and begin adding the Powdered Erythritol 1 tablespoon at a time.
When all the Powdered Erythritol is mixed in, turn the mixer to high and whisk until the egg whites have stiff peaks.
Gently spoon the meringue onto a lined cookie sheet and smooth into an 8-10in diameter circle. Leaving ridges will give a great crunchy outside.
Bake in the oven for 1 1/2 hours. Then turn the oven off and leave the pavlova to dry out for another hour.
Remove the pavlova from the oven and cool for an hour.

Pecan Bars
Keto Pecan Slice Base Ingredients:
2 cups of Almond Flour
3 tablespoons of Coconut Flour
¼ cup of Erythritol
¼ cup of Pecans finely chopped
½ teaspoon of Xanthan Gum
1 teaspoon of Baking Powder
4 ounces of Salted Butter, melted
1 teaspoon of Vanilla Essence
2 large Eggs
Keto Pecan Slice Topping Ingredients:
2 large Eggs
⅓ cup of Erythritol
⅓ cup of Sugar-Free Maple Syrup
3 tablespoons of Salted Butter, melted
1 teaspoon of Vanilla Essence
1 ½ cups of Pecans, roughly chopped
What to do~
Preheat your oven to 175C/350F. Line a 9in square pan with parchment paper and set aside.
Place the almond flour, coconut flour, erythritol, pecans, xanthan gum, and baking powder into a mixing bowl. Mix well.
Add the butter, vanilla, and eggs and mix well.
Spoon into the base of your prepared pan and spread out evenly.
Bake for 15 minutes, until the edges are golden brown. Set aside to cool.
In a mixing bowl, add the eggs, erythritol, maple syrup, butter, and vanilla. Whisk together, until well mixed.
Spread the pecans over the cooked based and pour over the egg mixture.
Bake for 20-25 minutes until the topping is set.
Leave to cool in the pan for 30 minutes.
Slice and enjoy!

Poke Bowl
What we need~
8 ounces of Fresh Salmon, skinless and deboned
1 tablespoon of Sesame Oil
1 teaspoon of Tamari Sauce
Pinch of Salt
2 cups of Cabbage, shredded (we used a mixture of Red and White Cabbages)
4 ounces of Cucumber, sliced
1 small Radish, thinly sliced
½ an Avocado, diced
¼ cup of Cilantro
2 tablespoons of Keto Sesame Mayonnaise
1 teaspoon of Sesame Seeds
1 teaspoon of Black Sesame Seeds
What to do~
Cut the salmon into cubes and place into a small bowl.
Add the sesame oil, tamari, and salt and set aside to marinate.
Assemble the cabbage, cucumber, radishes, avocado, and cilantro into two bowls.
Top with the marinated salmon, drizzle over the sesame mayonnaise and sprinkle with the sesame seeds.
Enjoy immediately.

. Pork Curry Recipe
What we need~
2 pounds of Pork Butt (Shoulder), diced
1 teaspoon of Cumin, ground
1 teaspoon of Coriander, ground
½ teaspoon of Cinnamon, ground
½ teaspoon of Chili Powder
2 tablespoons of Coconut Oil
1 medium Onion, diced
3 cloves of Garlic, crushed
1 inch of Ginger, finely sliced
14 ounces Coconut Cream
1 Lime, zest and juice
½ teaspoon of Salt
½ pound of Green Beans, cut into 2in lengths
What to do~
Place the diced pork into a mixing bowl and add the cumin, coriander, cinnamon, and chili powder.
Mix well and allow the pork to marinate for at least 2 hours, or overnight for best results.
Place a large saucepan over medium heat and add the coconut oil, onion, garlic, and ginger. Saute for 5 minutes until fragrant.
Add the marinated pork and cook for 5-7 minutes until evenly colored.
Pour over the coconut cream and bring to a simmer.
Simmer for 60-80 minutes, until the pork is tender.
Add the lime juice, salt, and green beans and cook for another 5 minutes.
Serve and enjoy.
