We’ve locked in Plate Your Plant for the during our event on 9/7 @ 9AM! When yoga gets out at 10AM, Michelle will be serving up a sampling of some of her favorite plant to plate dishes alongside our bubbly bar! Happy Sunday, for those of you who were at the CHIP potluck Thursday and asked…here’s the recipe for my cream of mushroom and barley soup.

Cream of Mushroom and Barley Soup


6 Cloves Garlic made into a paste
4-6 carrots chopped
4-6 stalks celery chopped
2 LBS cremini mushrooms sliced
3 T thyme
2 T cumin
2 T coriander
1 ½ t black pepper
5 T tamari
2 Cup pearled barley
9 Cups vegetable stock
4T nutritional yeast
¼ t crushed red pepper
1 13.5 oz can coconut cream (Trader Joe’s is my favorite)
5 oz chopped baby kale
6-8 oz chopped spinach

1) In the Instant Pot sauté onion 5 minutes, add garlic sauté another 2 minutes.
2) Add carrots, celery, mushrooms, thyme, cumin, coriander, black pepper, nutritional yeast and crushed red pepper. Sauté 5-10 minutes
3) Add tamari, barley and stock and mix well.
4) Place lid on and cook on high pressure for 20 minutes then quick release.
5) Stir in kale, spinach and coconut cream and mix until greens are wilted. Allow to cool 10 minutes then serve.
Note: If cooking stove top heat large soup pot and follow steps 1-3. Bring pot to the boil, reduce heat to simmer for about 30 minutes or to desired doneness. Follow step 5 and serve

Topped with plant-based mozzarella, parmesan, and crispy panko breadcrumbs. Served alongside a refreshing avocado cucumber salad and balsamic tofu.
