π Ingredients:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium yellow and 1 medium purple onion, finely diced
- 2 cloves garlic, minced
- 16 ounces (225g) mushrooms (cremini, button, or your favorite variety), sliced
- 2 lbs small golden potatoes, peeled and quartered
- 1 cup heavy whipping cream
- 2 cans cream of mushroom soup
- 1 tbsp Italian seasoning
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- Cayenne pepper to taste
- As much cheese as the law will allow
- Fresh green onions for garnish
π Instructions:
1. Boil potatoes for 8-10 minutes, drain, then toss with the Italian seasoning, dried rosemary, salt, and pepper. Stir everything together, allowing the flavors to meld for a minute or two.
2. Heat the olive oil and butter in a large skillet over medium heat. Add the diced onion and sautΓ© until translucent, about 2-3 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
3. Add the sliced mushrooms to the skillet and cook until they start to brown and release their juices, stirring occasionally.
4. Pour in the cream of mushroom soup. Add the cream and bring the mixture to a boil. Reduce the heat to a gentle simmer and let it cook for about 5-10 minutes, until the soup reaches your desired consistency.
5. Now, add the potatoes to the skillet, and let the soup simmer for an additional 5 minutes, allowing the flavors to blend harmoniously.
6. Taste and adjust seasoning as needed. If desired, add cheese and garnish with fresh green onions for a pop of color and added freshness.
