With a complex yeast, there’s more to fermentation than the number on the tank. Sometimes, you have to read between the lines.

Kveik Yeastery K.1 Voss gives brewers a yeast that can work with summer instead of fighting against it — a real Norwegian kveik from Voss, Norway, rooted in traditional farmhouse brewing and connected to Sigmund Gjernes.

Unlike a single lab isolate, K.1 Voss keeps the depth of a traditional multi-strain culture while giving brewers a reliable, modern dry yeast option.

A little roast can still belong in summer.

Not every warm-weather beer needs to be pale, and not every dark malt needs to bring heavy roast.

French & Jupps Brown Malt is a useful tool for restrained complexity: dry toast, light coffee, nutty depth, and color development without heavy crystal sweetness or aggressive black malt character.

Used at a lighter percentage, it can add structure to lower-ABV dark beers that still finish clean ; summer dark milds, table porters, brown ales, dark lagers, or bock-inspired recipes.

What do you think — is it too early to talk Oktoberfest?

Oktoberfest beers seem to show up earlier every year. Are we saying you need to be the first one with an amber lager on tap? Not officially. Is the jury still out? Absolutely.

But if you’re trying to keep up with the Joneses, it might be time to start thinking about the malt bill.

How to think about Elani:

In the whirlpool, it can bring pineapple, lime, orange zest, and soft stone fruit.

In the dry hop, it leans into guava, white peach, citrus candy, and bright tropical aromatics.

In a blend, it can help stretch high-impact tropical, citrus, or stone-fruit hops while keeping the beer in a modern IPA direction.

It is not a direct stand-in for every big-name fruit-forward hop, but it can cover some of the same recipe functions: citrus lift, tropical aroma, stone-fruit support, and clean dry-hop character.

Use it in modern pale ales, hazy IPAs, West Coast IPAs, and hop-forward lagers. Try it as the lead hop, use it as a supporting hop, or test it in split batches to see where it fits best in your system.

Useful hop. Several crop years. Better pricing. Real recipe potential.

Redo. We cropped Bryan and Brock out last time, so this one’s for them.

Good catching up with Bryan from Montana Craft Malt out at CBC and getting a chance to talk through what they’ve been working on.

We just brought in Montana Craft Malt’s Steffi lineup—both their Pilsner and Vienna—and it’s been a good one to dig into.

In the brewhouse it’s been solid—good extract, predictable performance, and it brings a little more malt character than a typical base without getting in the way.

Easy to build on, especially in lighter styles where you still want some depth.

Glad we got to spend some time with them out at CBC.
