We’re firm believers that what grows together, goes together - especially when it comes to local wine and good company. Every fourth Thursday, we shine a light on local flavor through thoughtful pairings and community collaboration.

Hippy Chick doesn’t just have hummus! This month, we’re showcasing the made-from-scratch food behind this beloved local café. Their philosophy is simple: real food, prepared in-house with ingredients you can feel good about—from their famous fresh-made hummus to their dressings, soups, proteins, cheeses, and more.

Local sourcing is part of their café recipe, too, with produce from Pleasant Hill Produce Farm in Walkersville, and a shared commitment to working with other local makers like The Kombucha Lady—reflecting a mutual focus on sourcing close to home for what we don’t grow ourselves.

For this Locavore Night on September 24th at 6:30pm, we’ll pair a selection of Hippy Chick’s fresh, thoughtfully prepared bites with our estate-grown Maryland wines. Bring your appetite and curiosity—we’ll take care of the wine, food, and the local stories behind both.

Once a year, we welcome our friends to our vineyard - to gather, to learn, to taste, to explore. On October 4th, join us as we welcome the fall season in the vineyard at Between the Rows: An Afternoon Passeggiata – a leisurely Italian tradition of strolling, socializing, and enjoying good food and drink. Sip on a special welcome pour as you stroll through the vineyard, and join Parker Aellen for a behind-the-scenes vineyard riding in the comfort of our Cru Cart tour to discover what’s happening in year two. Visit with our winemakers, Melissa Aellen and Ray Mitcham, for a 2026 vintage preview, and sample unreleased wines directly from tank & barrel. We’ll embrace the Italian atmosphere with a live musician, assorted grazing tables, and fresh wood-fired pizza made on-site. A full wine bar will be available for additional purchase of glasses or bottles to enjoy as you relax and embrace this season of change at Simple Theory Vineyard.

Some projects take time, care, and many hands to get right. After months of bottle fermentation and aging, it’s time to disgorge our next sparkling wine: the 2025 Blanc de Franc.

From removing the frozen yeast plug to corking and caging, every bottle passes through careful hands before it’s sealed and set aside — waiting, until it’s ready to pour this winter.

Quick vineyard update from Parker with harvest right around the corner: “Here we are looking at our Cabernet Sauvignon grape clusters going through veraison, the process when grapes start to change color and ultimately get closer to ripening. With only a few clusters per plant we are very optimistic in the quality of wine we can produce as long as the weather cooperates with us.”

With the hot days of summer in full swing, here are some tips to help keep your wine chilled so every sip is perfect.

–Chill ahead: put whites, rosés, and lighter reds in the fridge a few hours before enjoyment to let them chill down.
–Last minute chill: wrap a bottle in a wet paper towel and stick in the freezer to quickly chill a bottle of wine. Be sure to set an alarm and check after 20 minutes.
–Keep it cold: fill the container with ice and water to fully cover the wine bottle helping to keep it chilled while outside. –Use Frozen grapes: instead of ice cubes to prevent dilution, add frozen grapes to your glass. Plus they’re delicious to snack on.
–Don’t forget about the reds: red wine should be served at cellar temperature around 55 to 65°, so keep them out of direct sunlight or pop them in a quick ice bath too.

Or leave all the prep work to us and come visit us in the lounge where the wine is always poured at the perfect temperature!
