Rosendo & Pablo have been busy doing punch downs twice a day to keep our 2026 red ferments fresh, maximize juice extraction, and to help maintain those deep, vibrant red w**e colors. Punch downs are an essential part of w**emaking post-harvest. By keeping the cap submerged, this maximizes skin-to-juice contact, releases trapped heat, and promotes healthy yeast activity throughout fermentation.
