Did you know that you can make pesto using garlic scapes? In my latest video, I harvested garlic scapes from the garlic I planted in one of our raised garden beds last October and made a pesto for a sourdough focaccia.
Ingredients
- 1 c garlic scapes, washed, cut in 3-4 inch pieces
- 1/4 c walnuts or pine nuts
- 1/2 c shredded Parmesan cheese
- Pinch of salt
- 1 Tbs fresh lemon juice
- 1/2 c olive oil
Directions
- Pulse 1 cup of garlic scapes, 1/4 c walnuts, pinch of salt, 1/3 of the shredded Parmesan cheese 6-7 times in food processor
- Add lemon juice, 1/3 of the Parmesan cheese
- Turn on the food processor and gradually add the olive oil. Turn off the processor.
- Add the rest of the Parmesan and turn on the food processor

I used some of the pesto on a sourdough focaccia, which you can watch in our latest video (*link in bio). You could also use it in pasta, on meat, or whatever you like!
