The evolution of riddling continues. In Part 3, we're taking a closer look at the Gyropalette, the modern machine that has transformed one of sparkling w**e's most labor-intensive processes.

By carefully rotating and tilting entire cages of bottles on a programmed schedule, a Gyropalette accomplishes the same goal as traditional hand riddling with remarkable precision and consistency. The journey from grape to sparkling w**e continues. In Part 7, the w**e reaches disgorgement, one of the most satisfying moments in the traditional method. After months or even years of aging, the collected yeast is removed from the bottle, revealing a brilliantly clear sparkling w**e while preserving its natural bubbles.

This precise step marks the transition from production to presentation. With the lees gone, the w**e is ready for its final finishing touches before it's prepared to be enjoyed.

The journey from grape to sparkling w**e continues. In Part 6, the bottles enter riddling, where they are slowly rotated and tilted so the spent yeast settles neatly into the neck of each bottle. This careful process prepares the w**e for disgorgement while preserving its clarity and elegant bubbles.

At Windsor Run Cellars, this step is performed using a Gyropalette, allowing us to riddle hundreds of bottles with exceptional precision and consistency. It's one of the many ways we combine traditional w**emaking with modern technology to produce premium sparkling w**es.
