Next in our lineup is Chaos Cellars 2024 Vignoles. Vignole, also known as Ravat 51, is a cold hardy French-American Hybrid with great ripening potential in the Finger Lakes.
A little about the winemaking- The grapes were allowed to fully ripen on the vine before being pressed. The juice was then racked into barrels for fermentation and allowed to sit on the lees for 10 months with occasional stirring; giving it a richer rounder mouthfeel. Fermentation eventually stopped on its own leaving the wine at just over 12% abv with a semi-sweet finish.
The Wine- Bright aromatics of tropical fruits and fresh florals with a hint of oak open on the nose. The wines natural sweetness and high acidity give it a balanced and round mouthfeel. The palate is full of pineapple, orange blossom, apricot, and subtle earthy hints of green tea. Chilled down, this wine screams summer; however, my hot take? Save a bottle for those cold stormy nights sitting by the fire when you need a reminder of the better weather yet to come! (As seen in pic 2)

First in the lineup is Chaos Cellars 2024 Dry Rosé. This wine is a co-ferment of Chambourcin and Regent, two versatile hybrids with good cold hardiness, disease resistance, and intense color.
A little about the winemaking- These grapes were picked separately then combined for an overnight cold soak to create this wine’s rich pink color. The grapes were then pressed off the skins the following morning and the juice was racked into stainless tanks for fermentation. The fermentation finished around 12% abv and at complete dryness.
The Wine- Delicate aromatics lead into notes of hibiscus, raspberry, cranberry, and smartie candies on the palate. This wine’s high acidity and dry finish will leave your mouth wanting another sip, making this wine super crushable!

At Chaos Cellars we like to say we are guided by tradition, and driven by curiosity. We experiment, we question, and we aren’t afraid to embrace a little chaos.

When we started this project, I knew working with hybrid grapes would become a focus for us. They deserve the same care, technique, and attention typically reserved for vinifera. We wanted to show just how expressive and compelling they can be when treated with purpose.

Don’t worry, we still have a lot of love for vinifera! But when it comes to them we let ourselves play. We are looking to explore, push boundaries, and have fun with those familiar and favorited varieties.
Chaos Cellars is about balance and fun. Tradition and curiosity. Order and chaos.
