Salting the steak is important.

But what will make it taste significantly better is to let the salt sit on the steak. Preferably overnight.

It penetrates the steak giving it a great flavor throughout!

Silverskin doesn't look like much but it can do some damage to your perfectly cooked steaks.

It shrinks a lot more so it warps your steaks and it is tough to eat because it doesn't melt.
