Ever wonder how we clarify our wines without a factory or a shortcut?

This is wine racking. We transfer our Texas Blanc from tank to tank, allowing the natural sediment to settle and drain out. We do this about six times until the wine is clean and clear.

Most large-scale producers use clarifiers made from animal byproducts. We don’t. Our wines are organic and vegan, so we let the process do the work the natural way. It takes more time and more hands, but that’s exactly the point.

They’re here. Our Blanc du Bois grapes are on the vine and growing beautifully at Nice Winery.

These grapes will be harvested in June, along with grapes at Alta Mira Vineyard in Anderson, Texas, and crafted into our gold medal winning Texas Blanc; one of our most celebrated wines and a true expression of what Texas terroir can do. Stay tuned for the next vintage coming in July!

Sediment in Wine is a good thing.

It’s a sign that the wine was made with minimal intervention.

Most of the time, sediment in wine is either tartrate crystals (“wine diamonds”) or spent yeast, called lees, which are both natural byproducts. Neither is harmful.

A new wine is full of skins, seeds and bits of stems, as well as used-up yeast cells from the fermentation process. A portion of these stay in the wine.

Tartrate crystals are bits of potassium bitartrate that have fallen out of solution in the wine. They’re more common in white wine and usually happen when wine has been refrigerated.
(Potassium and tartaric acid are two natural components of grape juice that can be finely ground and sold as “cream of tartar” for baking use.)

After many months or years in bottle, some of that stuff will form a fine silt or sediment of lees at the bottom. This happens in almost every good, ageworthy and tannic red wine, whether Bordeaux, Barolo, Rioja or California Cabernet Sauvignon. The fine sediment can form a visible lengthwise strip if a bottle lays on its side undisturbed for years or decades.
