Owners and operators — are you keeping the hiring faucet on, or waiting until there’s an opening?

A mentor told me something years ago that stuck with me.

He said hiring managers is like a water faucet.

You don’t want to wait until there's an opening to turn it on.

You want the water flowing before you need it.

That’s especially true in restaurants.

A lot of owners and operators wait until they have an opening before they start looking for management talent. I understand why. Everyone is busy. Payroll matters. Timing matters. You may not need anyone today.

But when the faucet is off, it takes time to get it flowing again.

And in the meantime, the pressure usually lands on the people already in the building.

Managers take on more hours.
Development gets pushed back.
Goals get pushed back.
Hourly team members don’t get the coaching they need.
The operation starts running short-handed longer than anyone planned.

I’ve seen it firsthand as a GM and Area Director.

When you have a bench, you have options. When you don’t, you’re reacting.

That’s where a good recruiting partnership helps.

We work on a contingency basis, so there is no cost unless you hire someone. You can look at qualified candidates, compare them to what you’re seeing on your own, and keep a pulse on the market before you’re in a bind.

Big win for Jersey Mike’s.

According to the latest American Customer Satisfaction Index report, Jersey Mike’s officially ended Chick-fil-A’s 11-year streak as America’s highest-rated quick-service restaurant.

That’s not easy to do.

Chick-fil-A has been the gold standard in quick-service for a long time, so seeing Jersey Mike’s take the top spot says a lot about what customers are looking for right now:

Fresh food.
Consistency.
Good service.
Value that feels worth it.

I’ve always been a big Jersey Mike’s fan. There’s just something about a place that keeps it simple, executes well and makes people want to come back.

In this business, that’s the whole game.

"I lead by example." Every single candidate says it. And Every single hiring manager has stopped believing it.

Generic answers don't lose you the job outright - they just blend you into the pile of 40 other applicants who said the same thing. The fix isn't a better script. It's a formula: name the trait, show the specific behavior, back it with a real result.

Kansas City is hosting the World Cup.
For a lot of World Cup visitors, this may be their first time here. They may come for the soccer, but their impression of Kansas City will be shaped by much more than the match.
It will be shaped by the restaurants they visit.
The hotel team that checks them in.
The bartender who gives them a local recommendation.
The server who takes care of them after a long day.
The manager who keeps the operation moving when the place is packed.
The people who make this city feel welcoming.
If someone asked me what they should see while they’re here, I’d tell them to make time for Union Station, the WWI Museum lawn, 18th & Vine, the Negro Leagues Baseball Museum, the Plaza, Crossroads, River Market, Power & Light, the streetcar, and definitely some Kansas City barbecue.
But that’s just my list.
I’d love to hear from other Kansas City people too.

Story time —

My wife, my son and I are big soccer fans, so living in the Kansas City area right now is pretty awesome. With the World Cup here, this is a huge moment for our city.

Yesterday was one of those days that reminded you why this tournament is so special. Mbappé, Haaland and Messi were all on the field and they all played like the stars they are.

I’ll be honest — I’ve never been a big Messi fan. I respect the him, and I acknowledge he's the GOAT. That always makes for a pretty good debate in our house as we discuss different players and eras.

Of course, we’re all pulling for the USA first. After that, though, we all have different players and teams we’re rooting for, which makes it even more fun.

That’s what I love about the World Cup. The biggest stars in the world show up, every match feels like it matters, and everybody has an opinion.

Your salary may be lying to you.

A $70,000 restaurant manager job can sound pretty good on paper.

But let’s be honest.

If you’re working 60 to 65 hours a week, closing four nights, covering callouts, doing inventory, writing schedules, training new managers, and still getting texts on your day off — that salary starts to look different.

Before you accept the offer, do the math.

Don’t just ask, “What’s the salary?”

Ask:

How many hours am I really working?
How often am I closing?
How many managers are on the team?
Does the bonus actually pay out?
What kind of support will I have?

Sometimes the better job is not the one with the biggest base salary.

It’s the one that gives you a fair shot to do the job well without burning yourself out.

Save this before accepting your next offer.

Your best manager didn’t quit suddenly.

Owners, this one may sting a little.

Your best manager usually does not wake up one morning and randomly decide to leave.

They leave after months of being stretched too thin.

Months of covering callouts.
Months of being told help is coming.
Months of vague promises.
Months of no real schedule balance.
Months of feeling like the only person still holding the place together.

By the time they give notice, they’ve usually been gone mentally for a while.

And replacing them is not the same as fixing the problem.

If good managers keep leaving, don’t just ask, “Where do we find better people?”

Ask, “What are good people experiencing once they get here?”

That answer usually tells you more than another job ad will.
