Good morning Everyone,

Fear comes with anything that is in the unknown. We aren't familiar with something, we can't convince ourselves that nothing will go wrong. So all of the "what ifs" start to enter our minds. If this happens to you, it doesn't mean you are weak, it means you are normal. Trouble only comes in when we allow FEAR to answer for us. Or we make all our decisions based on FEAR. Fear is seldom based on facts. That's why the courageous are those that say "I hear you fear...but you don't get a say on what I do next".

In most cases, people want to want to change. That was not a typo. People want to want to change. Knowledge, other people, circumstances, all tell us that maybe, just maybe something needs to happen differently than how it is happening right now. We even acknowledge that, and then we tend to just go through today exactly like we did yesterday. Having the knowledge about something is not what incorporates change, it's what you do with the knowledge that really matters. You may know for a fact that you have to change a lifestyle for health reasons. But that knowledge does nothing for you unless you take action and change your eating habits, or change your activity on a daily basis. The knowledge itself does not make you healthier. So if there is no movement on our part, then we have to justify why I know what to do, but don't do anything with it. So our minds come up with excuses to tell ourselves and others why we can't. If you only search for reasons (excuses) why you don't do something, you will probably find them. This process will add absolutely no fuel to your tank. And without fuel, obviously you will go nowhere. But if you truly WANT TO see a difference and not just WANT TO WANT TO, just change your search criteria. Search for reasons why you CAN do something. It is amazing the fuel that will give you to actually move forward.

You can't bank an hour today and save it for tomorrow. So what do we do with it? It really is a scarce resource. If it is wasted, it cannot be recovered again. That is why being intentional in what you do is so important. In my opinion, it's not even about how you "spend" your time, it's how you "invest" in it. Choose your goals with purpose and intentional thinking. What are you doing with today? You will never get this day back. Are you just spending your time today? If you choose how to use today wisely, it will be an investment and not just an expense.

More action today. Please note that in a reheating process, I do not cook all the way on some items. These are techniques chefs gather to keep the quality of freshness at its peak. My kitchen where I prepare is 8x8. Very small. Utilization and organization is vital. At my age, going up and down the stairs doing 6 trips takes a load on my back. These are partial pictures. I received my LLC last week and renewed my EIN number. Its all work in progress. More to do on Wednesday.

First day on the Job with my client. Amerigoeducation. International boarding school. Have 18 this week and 27 next week. Only got a few items I prepared. I have one that is Lactose intolerant and one no shellfish. 4 meals on Mondays and 3 meals on Wednesdays. Close to 190 meals a week. Next up Dealerships, Sub Divisions and the Chamber.

Good Morning Everyone,

Insight: Years ago I had the privilege to teach the Texas Chefs Association Chef Apprenticeship Program. I always taught and I looked at the class and told them that I have never made a bad decision. Of course they all looked at me like I was crazy, or arrogant, or both. I began to explain. In life, when I came up to a decision, I used everything I knew at the time to make a decision. Notice, I did not say that I never made a WRONG decision. If I later found out that I did not make the most successful move, I corrected my path with my new knowledge I received from that failure. It's at those times that I learned the most. And I can tell you this, I learned a lot more by making the decision than I would have if I made no decision at all for fear of making a bad one.
