Sweet Potatoes & Paprika Chicken - One Sheet Pan Dinner 🍠🥔🍴🐔

Ingredients
I package of Gerber’s Boneless Chicken Breasts cubed
4 tablespoons olive oil
1 tablespoon paprika
4 tablespoons minced garlic
2 tablespoon Dijon mustard
1 tablespoon freshly squeezed lemon juice
2 teaspoons salt
2 teaspoon black pepper
▢ 4 medium potatoes, diced
▢ 2 sweet potato, diced
▢1 medium red onion, chopped

Instructions
Preheat oven to 425℉. Place vegetables on a large sheet pan. Drizzle with 2 tablespoons olive oil, sprinkle with 1 teaspoon garlic, salt and pepper. Toss until everything is coated.

In a small dish, mix together 2 tablespoons olive oil, paprika, 2 cloves garlic, mustard, lemon juice, 1 teaspoon salt, and black pepper. Spread over both sides of chicken breasts and then make space for them on the pan of vegetables. Drizzle more olive oil if needed to cover everything. Bake for 30 minutes or until chicken is done. Use meat thermometer to ensure internal temperature reaches 165 degrees. Sprinkle with parsley and enjoy!
