Let’s make dinner together! This mango avocado grilled chicken is quick, easy, and oh-so-healthy, the perfect way to enjoy great flavors and quality time with loved ones! 😋

Ingredients:
- 2 chopped mango
- 1/2 diced red onion
- 1 chopped avocado
- tsp of cilantro
- 2 tsp of lemon juice
- 1-2 tsp of olive oil
- 1 bunch of broccoli steamed
- Chicken tenderloins cooked in the air fryer for 12 minutes (cooked while chopping the avocado salsa)

Quick! and go order a simple and cheap waffle iron and add this into your breakfast or snack option rotation! This is insanely easy and so delicious. This is so great with summer coming and you are needing some quick high protein ideas. Spray your mini waffle iron with cooking spray and break the egg directly into the waffle iron. Close the lid and let the magic happen. I made one sandwich with an egg as the bottom "waffle" and then the top "waffle" was all egg whites. This is a great snack or breakfast sandwich option. You can use an egg, or do all egg whites and also add in a piece of bread if you wanted an open faced sandwich. I added sliced tomato and avocado as a healthy fat with some of my favorite leafy greens that I had on hand which was a small handful of arugula. Make this waffle sandwich for a quick high protein breakfast or use a piece of bread (I used Dave's Killer Bread thin sliced) to make an open egg white sandwich. The options are unlimited and so easy to do. ENJOY!

Salad Ingredients:
Handful chopped red cabbage
Handful bagged cole slaw mix
1/2 cup chopped peppers
1/2 cup diced cucumber
2 cups shredded chicken (precooked from Trader Joe’s)
Top it off with some peanuts or nuts of choice for a great crunch!

Dressing Ingredients:
1 T of natural peanut butter 2 tablespoon liquid aminos
2 tablespoons water
1 tablespoon lime juice
2 teaspoons honey
1 teaspoon sesame oil

Are you feeling like you need something to satisfy your sweet tooth at night and not totally crash your diet and blood sugar? Well, I have the easiest cottage cheese chocolate cake dessert that you can make all together or even portion it off in individual ramekins if you're wanting smaller individual sizes to microwave or heat up. Here is the easiest recipe that will satisfy you and keep you on point!

Ingredients:
~1 cup of low fat cottage cheese
~ 1 egg
~2 T of cocoa powder
~2-3 T of stevia (optional)

Directions:
1. Blend all ingredients until smooth.
2. Pour into a greasted mold or ramekin
3. Bake for 15 minutes at 350 degrees.
4. Let it cool slightly and sit to harden, then enjoy!

Nutrition for whole cake:
~Calories: 180-200
~Protein: 14-18 grams
~Carbs: 6-8 grams
~Fat: 8-10 grams

Divide the macros into 4th if you are doing 4 ramekins!

“I started working with Betsy in March of 2023. I had always been a bigger guy. And it doesn’t help that I travel often for work. On the road, it was easy to eat junk food anytime. As I turned 30, I realized that in addition to my weight going up, I was also having less energy than ever before.

After trying several fad diets just to end up hangry every three days, I asked my co-worker to send me Betsy’s info. I knew whatever I did, I needed some accountability. At first, I was concerned that the distance from Betsy would make things too difficult. But thanks to technology, distance was not a problem.

Working with Betsy has given me a better understanding of nutrition and how to fuel myself for my day and lifestyle. I was officially a client of Betsy’s for seven months. In that time, I lost 60 pounds and 8 inches in my waist. Since I stopped working with Betsy in September of 2023, I lost an additional 20 pounds (which made a total of 80 lbs.) and another 4 inches in my waist. Having the knowledge to either stay on track or get right back on track after a vacation or holiday has been a blessing for me and my family.”

Arugula is currently my top choice for leafy greens. 🥗 This Arugula Chicken Bowl is a speedy and nutritious lunch option. I hate chopping sweet potatoes, so to simplify things, I buy frozen chopped sweet potatoes, from Kroger, which I air fry and store in Tupperware for a convenient carb addition to my meals.

Pro-tip: If you’ve got prepped chicken in your fridge, assembling this bowl becomes even quicker and easier.

Ingredients:
2 cups of arugula
3 grilled chicken tenders
1/2 cup chopped sweet potatoes
1/4 cup sliced cucumbers
Sprinkle of sesame seeds
Drizzle yogurt dressing
