How many stylists have kitchen knives that are rusting? I’d be willing to bet that none of their “good” knives (wustoff, victorionox, shun etc) have rust spots.
Why tolerate it on your shears?
Shears need to hold an edge and should be designed to bear up under the stringent sanitation req’s you’re under. Rust spots on your shears mean you’ve either been super negligent by leaving them in acid for days or your shears use cheap metal and the company is lying about their quality and origin.
Lately I’ve been seeing a distressing amount of high-cost shears that are nearly seized-up at the pivots and full of rust spots on the blade. A good sharpener can help with rust and discoloration, but please be careful buying from folks who claim high-end steel but who won’t include markings on the shear that show country of origin. Esp the folks who are pushing shears made in China for less than $10 and selling them for north of $1000.
