Not drywall. Homes like the one in this photo were built with wood lath, and sometimes brick or stone bracing behind it, like the exposed doorway in the inset shot. Plaster was applied over that lath in coats.

Paint applied over a small area dries into its own patch of film, with a hard edge where it stops. Your eye finds that edge under side light, no matter how close the color is.
