Zucchini Gratin with Yellow Squash is a luscious creamy cheesy medley of zucchini, yellow squash, onions, and garlic. It is quick and easy to prepare.
Ingredients:
2 medium zucchini, thinly sliced
2 medium yellow squash, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, minced
1 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
2 tablespoons chopped fresh parsley (optional)
Directions:
Prep Vegetables: Preheat your oven to 400°F (200°C). In a large bowl, toss the zucchini and yellow squash with salt, pepper, garlic powder, and onion powder.
Sauté: In a large skillet, melt butter over medium heat. Add onion and garlic, sautéing until soft. Add the cream and bring to a simmer. Remove from heat, then stir in the cheddar until melted.
Assemble the Dish: Layer half of the zucchini and squash in a greased baking dish. Pour half of the cream mixture over the vegetables. Repeat with remaining vegetables and cream mixture. Sprinkle Parmesan cheese and bread crumbs on top.
Bake: Bake for 25-30 minutes, or until the vegetables are tender and the top is golden brown. Garnish with chopped parsley before serving.
