In Amboise in the Loire Valley, France I found beautiful white wine, amazing historical Chateau’s, surprising Cabernet Francand one of the best open air markets I have been to yet! Plus the last home of DaVinci!

In Paris I was definitely more focused on art, architecture and history, but I did have a few deliciously memorable meals and of course wines! The first picture was Pigeon, that was a first for me and for some reason after I kept having moments with pigeons throughout Paris, but that meal introduced me to Gigondas wines from Rhône which I fell in love with this past week! Wallys Wine Bar was suggested to me and has been around since the 1930’s and I enjoyed some great wine and wonderful cheese pairings. Of course after a long day of touring museums I had a wonderful late lunch of Crêpes paired with hard cider for the cheese Crêpe and once of the best cappuccinos of my life with dessert. The wild mushrooms with a white Burgundy was so delicious and well paired that it was hard not to order more!

As I travel thru France I learn that the diversity of the Bubbles is as diverse as the country. As rich and wealthy as the Avenue de Champagne is you can find that throughout the countryside, but my favorite was a humble guesthouse house with deep caves beneath and glorious amounts of delicious and complex Champagne. Some with subtle oak, some young and fresh and others aged with deep color and complex flavors. Both Philippe Martin and Vincent Charlot were small but huge finds!

They say that Avenue de Champagne may be the wealthiest street in the world, with all the caves below full of Champagne some dating back more then a 100 years. I learned a lot while in Champagne but one of the things that stood out the most was the uniqueness of the Champagne depending on the age, youthfulness and even oakiness! I learned I love it all, but would rather have an oakie Champagne with food!
