🥗 Adventure-tested: ANCESTROS’ Calabacita Salad 🚌

This salad’s been places! After a 30-min bus ride, errands, and an hour’s wait, we finally dug in. The verdict? Mind-blowing resilience! 🤯

Rising to the culinary occasion with Trader Joe’s 7-Ingredient Pizza Party Challenge! 🍕

Dive into the fusion of flavors with our vegan-friendly creation that promises an unexpected & delish flavor combo🌊🍋🌿:

PLANT-BASED SEAFARE PIZZA W/ CHIMICHURRI + YUZU

Ingredients

💠 2 battered plant-based fish fillets
💠 3 Tbsp sundried tomatoes, excess oil drained
💠 1/2 block vegan feta cheese alternative, crumbled
💠 1 garlic and herb pizza dough
💠 1/3 cup chimichurri sauce, plus more for drizzling
💠 Nori Komi Furikake, for sprinkling
💠 Yuzu hot sauce, for drizzling

Pairings:
🥂Wine: LaGranja Verdejo & Viura 2022
💧Non-Alcoholic Beverage: Sparkling Grapefruit (or another sparkling citrus if preferred)

Instructions:
💠 Preheat your oven to 500°F (260°C).
💠 Place the fish fillets on a baking sheet and bake for 8 minutes on each side.
💠 After baking, transfer the fish fillets to a brown paper bag and set aside.
💠 On a lightly floured surface, stretch the garlic and herb pizza dough into a circle.
💠 Brush the dough’s crust with the oil from the sundried tomatoes.
💠 Spread the chimichurri sauce evenly over the dough.
💠 Arrange the sundried tomatoes on top of the sauce.
💠 Drizzle Yuzu hot sauce over the sundried tomatoes.
💠 Slice the baked fish fillets diagonally into 1/2-inch strips and distribute them on the pizza.
💠 Crumble the vegan feta cheese over the fish.
💠 Sprinkle Nori Komi Furikake around the pizza’s edge.
💠 Place the pizza on the top rack of the preheated oven & bake for 22 minutes, or until the crust reaches your desired doneness.
💠 After baking, drizzle additional chimichurri and Yuzu sauce over the pizza.
💠 Slice, serve, and enjoy with your chosen pairing!

✨🍔✨You betcha we got some feedback : This burger SLAPS!!

🤠Behold what we’ve dubbed the “Wild West Burger”, a plant-based creation made exclusively by improvising with the array of ingredients found on the menu.

Starting with a humble veggie patty, then going to town with toppings — from BBQ sauce to sautéed jalapeño, onions & mushrooms — this bad boy would have given Jesse James a run for his money.

The team took a trip to San Diego & came across Tommy Bahama Marlin Bar ()– a gorgeous open air eatery, connected to the Tommy Bahama store () located at Fashion Valley Mall ()

Hungry with a big appetite for lunch, we were welcomed by Jack () to take a look at the menu & saw a couple of promising vegetarian options, but not a vegan option in sight.
We knew that we had our job cut out for us so we politely made a request with Chef Mary () to customize & create our own dish based on the ingredients available.

The result was a stunning (& stinging 🌶️) Cajun-Fried Buffalo Cauliflower Flatbread.

We looked to the 808 Flatbread as inspiration, omitted the pepperoni & cheese, topped it with cauliflower bites, drizzling buffalo sauce (minus the butter to make it vegan!) & finished it off with their housemade jalapeño-avocado salsa.

The dish was a delicious hit as the head honchos from Victory MMA () happened to be dining next to us & requested the same flatbread right on the spot! (Side note: they LOVED it, but we’ll have to dial down the heat if we bring this dish to the masses…😅)

Can’t wait to again soon!
