Oooooohhhh Sophia you look amazing girl !
This is Sophia a bloomy rind goat cheese marbled with vegetal ash, 2020 Good food winner from
(this little log is about as ripe as it gets my guess is she's about 6-7weeks old It is tangy a wee bit bitter with that familiar goaty tang)
But just imagine, these little ladies are still hand ladled with care using traditional French methods in Indiana, USA
I do a fair amount of tasting 😉 off a taster spoon, but this would pair nicely slathered on a baguette with a drizzle of honey and a glass of Moscato wine
Or with something savory like olives.
