Every bite was a straight-up 10. No notes, y’all. 🤠🌮🏄🏽

Cowboys on the coast making tacos… wasn’t on my bingo card, but here we are. And it WORKS. .eats

Carne asada: smoky, insanely well-seasoned, chopped super fine (unexpected… but 🔥).
Brisket: melt-in-your-mouth with those crispy edges you dream about.

Next time? Fixin’ to try these babies on corn tortillas.

Also don’t sleep on:
– Cowboy caviar (black beans + elote = ridiculous)
– Miso-glazed carrots (?? yes.)
– Smashburger (out of control good)

I’m baaaack. Don’t worry… even though i haven’t posted since Easters, the search has been going on full speed ahead. Living every day like it’s Taco Tuesday while heads down building .

Y que razón más fabulosa to kickstart things than to share the latest in the taco quest. Does live up to it’s high expectations??

Power lunch with mi hermano tampiqueño :
Costilla
Pastor (from the trompo AND with piña. Bravo!)
Campechano (carne y chorizo)
Serrano covered in melted mozzarella 😬 cheese

Y para cerrar con broche de oro, the taco fabuloso was an abundant protein fiesta with birria, carne asada and queso por todos lados. Def recommend!

Was longing for a nice chunky molcajete salsa or something tatemada.

Been waiting for months and months for to open. Decided to give it an inaugural run for a birthday gathering. And even though about half of their menu is a fusion taco situation (a la tikka masala and Korean steak), I opted for the classic trifecta of Al pastor, Tinga and OG Carne asada. Just what I needed. Absolutely stuffed full of protein and abundant in delicious sauces (maybe a little too abundant for my preference). Excited to try the fusion ones next time! Glad to have another taco option in the Draper area!

Airport food gets a bad rap. And over the past years, Terminal 2 at the international airport in Mexico City has really been stepping up its game beyond Chili’s and Wings. and this alambre de pastor with the costra cheesed all up in it from . When the expected taco home run of ’ trade mission was this perfectly balanced fusion fish taco. Lettuce-wrapped, soy crusted, limey Japanese two-bite piece of robalo (sea bass) heaven. Tried to go back on night two but they had closed the kitchen and we almost cried. nos conquistaste el corazón (y la panza)! This is where business and long-term relationships are made with . 🔥🇺🇸🇲🇽

I freaking LOVE a norteña breakfast. So when I heard about La Tonina from and his , it became a priority.

Check this out! Handmade flour tortillas wrap whatever you’re craving in the moment. Salsas. Lime. It was so crazy good and took me back to the 90s when I lived in Mexico a missionary.

I brake for tacos. So when I saw a cart after a meeting in West Valley City, UT, I pulled over.

Realizing I didn’t have my wallet for cash, I leaned out my window and asked, “¿Aceptan Venmo?”

“¡No se preocupe! Mañana me lo pagas,” Sonia happily said. “Coma Ud. a gusto!”

Good or bad business practice? She made me feel like a trusted client. I’ll be back Sonia! And I’ll bring my friends!

That’s the reaction I get when I say we led a taco tour in London one day this summer.

That’s right… on the other side of the pond. And pregaming at .

2 suadero. 2 pastor.

Salsas really were terrific… the tomatillo on the chips, the puréed sautéed jalapeño for the pastor and the chipotle for the suadero. In Canada Water area of London, check them out! 🌮🏃🏽‍♂️🇬🇧

What a way to kick off a business conference. Prepping for this years Rise Summit with got me all nostalgic. These beauties from the man himself — Cal with — were devoured by all the speakers on this VIP taco tour. He is quite the smoker… this rich smoked meats were 🔥. Orange County ancho-rubbed pork was my fave but not too far behind was the El Paso brisket. Find them in St. George for SURE!
