She has been a work in progress for years. I was so nervous and really excited and then totally overcome by nerves again to finally release her. Pinot Noir, Pinot Meunière & Chardonnay. When I tasted her last week, for the first time after all these years, resting in bottle on the dead yeast cells after the secondary fermentation, (That’s the video of me, crying🥲🫣) I was struck by just how exceptional the quality of the wine and the tiny bubbles are after these 3 years. Holygod - it’s delish!! I’m so excited to share her with you. Finally - she’s ready to dazzle!!🌟
