These bourbon barrels have been quietly doing their work.

Our bourbon barrel-aged Reserve Meads are getting close to release. The next step is bottling and labeling, and we expect the first releases to be ready in late summer, with others following in early fall.

These have been given plenty of time to develop rich, deep flavors from the honey, fruit, and bourbon barrels.

More details on each release coming soon.

📹 We're Opening This Wednesday Evening!

Exciting news! Keepers Cut Meadery has been selected as one of the downtown Marion businesses to be featured as Main Street America films in our community this Wednesday.

Although we're normally closed on Wednesdays, we'll be open from 5:00–8:00 PM to welcome the film crew and celebrate this special opportunity.

If you're looking for something to do Wednesday evening, we'd love to have you stop by. Help us show Main Street America the warmth, hospitality, and community spirit that make Marion such a great place. A meadery full of friends and neighbors would make an incredible impression—and you might even find yourself in the finished video!

Come enjoy a glass of mead, say hello, and help us showcase downtown Marion at its best.

Blackberries being pressed for our **Blackberry Reserve**.

This mead has been aging in a bourbon barrel and will be released soon as a very limited offering. We made only 50 gallons, and once it’s gone, we don’t expect to release another batch for at least three years.

Rich blackberry, honey, and bourbon barrel character—all given time to come together.

Plan on getting yours before it’s gone.

A quick update from Keeper’s Cut Meadery

Keeper’s Cut will be closed until Thursday, July 30, 2026 while Kathy and I travel to Baltimore for my scheduled scans and follow-up appointments.

Normally, Anthony would be here to keep things running while I’m away, but he is currently unable to do so. Because of this, Kathy and I are unable to operate during this time.

Thank you to everyone who continues to support Keeper’s Cut — our customers, friends, and the community that has made this journey so special. Your understanding and encouragement mean more than you know.

I look forward to being back behind the bar on Thursday, July 30, sharing a pour and catching up with everyone.

Thank you, and cheers!

Caramelizing honey for our bochets.

The first video shows the honey earlier in the process, cooked at a lower temperature. The second is later, at a higher temperature, when the honey becomes darker and develops deeper caramelized flavors.

How long and how hot we cook the honey can completely change the finished mead—from lighter caramel and toasted honey notes to darker flavors that can remind you of toffee, molasses, or even toasted marshmallow.

Bochets can be wonderful by themselves, or fermented with apples, spices, and certain fruits. They can also become something really special after aging in oak or bourbon barrels.

Same honey. Different temperatures. Completely different flavors.
