It’s a soup and salad kind of day! Delicious fresh produce is still available at the farmer’s market to prepare a crunchy and bright salad. And although there may not be much of a chill outside, sitting indoors with the air conditioning on high makes you want to warm yourself from the inside out. A bowl of Athenian Foods’ Egg Lemon Soup is just what this weather ordered. The citrus flavor of the lemon gives it a light and summery feel while the creamy smooth broth warms you up. The rice and chicken make it hearty enough to be a meal but hey, you don’t want that produce to go to waste so make it a soup and salad combo kind of day!

Athenian Foods’ Spanakopita are a delicious blend of spinach and feta cheese hand wrapped in layers of flaky filo dough. Our retail pack contains 12 pieces that can be baked all at once or you can take out just what you’re craving. We like to throw just a few in the air-fryer, spritz with a little Athenian olive oil and cook until they are a golden brown. This makes for a nice light lunch or afternoon snack.

Both Athenian Foods’ Spanakopita and Tyropita retail packs are found in the frozen aisle at independent grocery stores throughout Chicagoland.

Today is National Ants on a Log Day! Lol! Yes, there is actually a day set aside to bring attention to the snack which is typically a slice of celery, spread with peanut butter and dotted with raisins. It’s a delicious and rather healthy snack dating back to the 1950’s, but we believe pallets have become more sophisticated in recent years and so we decided to develop our own version which has a Greek flair and a savory taste.

In our version we spread our logs (aka celery sticks) with Athenian Foods’ Spicy Feta Spread and then dotted them with sliced Kalamata olives. Our Spicy Feta is a mixture of feta cheese, cream cheese, Greek yogurt and red peppers. It has a very mild spiciness which comes from the red peppers and which makes it agreeable to palettes of all ages. And the brine of the olive makes each bite a perfect level of savory.

If you’re antsy to try our recipe, head over to the dairy case at your independent grocer and pick up some of Athenian Foods’ Spicy Feta Spread. Whatever you don’t use to make this snack you can spread on crackers or chips.

Athenian Foods’ Lahanopita is an amazing entree but since it is all vegetable, it can also be served as a delicious side dish. It is typically sold by the piece or by “the pound” in the hot food or deli case of your independent grocer or also sold as a frozen family entree in the frozen section, where other frozen entrees are sold.
