Finca San Ignacio stands out as unique for many reasons. For starters, it is one of the few farms that still has an address within the town of Antigua.Antigua has farms mostly between 1300β1600 meters, many situated on one of the three main volcanoes, called Agua, Fuego, and Acatenango. The volcanic soil helps lock in moisture, as the region is sunnier and tends to get less rainfall than elsewhere, and the coffees are sweet, smooth, and good for blending or as mild, lower-acid single-origin offerings.
This farm is managed using customs and techniques native to the region, and many of the traditions used predate the last century. The Catuai trees planted at San Ignacio are between seventy and eighty years old. Because this farm is found in the center of the valley,the concentration of colder winds and less rain make this one of the last farms to ripen in the region, resulting in a very distinct and different flavor profile from other nearby farms.
