Colorado Lamb in Springtime? Proof that BBQ isn't just for knuckle draggers and door kickers, we're going Tier 1 Special Operations Forces (SOF) style with advanced techniques: a Dutch oven in the smoker for braised leg of lamb! Smoked with post oak while also braising in Argentinian Malbec wine accompanied by a mirepoix (carrots, onion, celery), leeks, lemon confit paste (for inside the lamb), parsley, bay leaves, and an assortment of spices. Yep, it tastes as good as it looks and sounds. Many thanks to Halona Farms for providing that world-class Colorado lamb!

Safety note: I wear thick welding gloves and use extra long tongs and utensils when I'm doing this cooking technique.
