Tomorrow (Wed. June 27th) Evening's "Judgment of Morro Bay" Blind Wine Tasting (celebrating the 50th Anniversary of the Judgment of Paris that forever changed the trajectory of California wine) was sold out, but we just had a cancellation, so there are 4 tickets available!

At 6pm sharp, we will gather at our Tasting Lounge in Morro Bay with a blind tasting, featuring 4 rounds of award-winning wines (8 wines in total) - see if you can determine which ones are from California and which ones are from France (whoever gets the most right will win a prize!), as well scoring all the wines so we can determine the overall winners. You'll each get a cheese plate to enjoy during the tasting. After the Tasting, you are welcome to stay to enjoy a private viewing of “Bottle Shock”, based on the Judgment of Paris blind wine tasting competition that shocked the wine world in 1976. We'll have popcorn for you, and you can order additional wines by the glass.

Happy Mother's Day!

Back in my real estate development days, I'll always remember a study I read that concluded "home" was the 2nd most powerful word in the English language - I took that as a challenge to turn one of the most basic human needs (shelter) from something that was just a house into a home, and I like to think that I usually succeeded in that task. But today, let's focus on the word that was deemed the most powerful word in the English language - "Mom".

Whether it's your Mom, or one of the many people in your lives that helped play that role, Moms are pretty special.

My Mom (Mutti) loved Rosé (now that she has dementia, she no longer drinks), particularly the Weißherbst that is grown around the Bodensee (aka Lake of Constance) where I was born and raised as a young child. While my Rosés aren't exactly the same, she really loved mine (she was very picky about her Rosés).

Wine, Cheese, and a Movie - Celebrating the 50th Anniversary of the Judgment of Paris! Wednesday, May 27th - 6-9pm - Park Cinemas - Paso Robles

May 2026 marks the 50th Anniversary of the Judgment of Paris, the blind wine tasting which forever changed the trajectory of California wine! To commemorate this momentous occasion, join us for a special Wine Tasting event at Park Cinemas in Paso Robles on Wednesday May 27th. To make the evening even better, we at Absolution Cellars would like to thank you by hosting a private viewing of “Bottle Shock”, based on the Judgment of Paris blind wine tasting competition that shocked the wine world in 1976.

You'll enjoy a wine tasting (not blind!) from 6:00-7:00, and then enjoy a glass of your favorite wine from the tasting along with a cheese plate during the movie from 7:00-9:00pm. Regular movie theater concessions will also be available for purchase.

Monday Meal - after a long day getting back into the swing of work, who wants to then also spend a lot of time making dinner? (Hint, it's not me!)

Each Monday, I'll share something quick, easy, and delicious to enjoy, and of course a wine pairing!

Kicking things off, we've got some fresh Tuna Belly Sashimi (also known as Toro) - in this case, Bluefin Tuna, but you can use whatever fresh Sushi-grade tuna you can find locally (belly is harder to find than the loin, which is also wonderfully delicious). We're trying to be mindful of portion sizes, so usually between 1/2 and 3/4 pound is all we need for the 2 of us. I'll place it in the freezer as soon as I get home, which makes it easier to cut. I usually buy some seaweed salad to go with it (1/4 to 1/3 pound).

Make sure you have a sharp knife - I don't own a sushi-specific one, but I find our cleaver works pretty well. I'm no expert, so I don't know the proper way to slice sashimi, but through trial and error, I find cutting diagonally to the fat veins works pretty well. Slice it up, plate it, add the seaweed salad, and your choice of dipping sauce - we like Ponzu, but regular Soy sauce works as well.

Between the time we get home, unpack, slip into comfy clothes, and prepare the dinner, it's 15-20 minutes at the most until you've got amazing Sashimi headed into your belly!

For this particular meal, we chose a bottle of our 2022 Albariño, but any great white (pun intended) will do. The fattier the fish, the more acid driven wine (our Trebbiano and Felicidade), while something like the more commonly available "Ahi" loin can work with Rhones like our Balance or Clairette Blanche, and even a lighter Chardonnay (stainless or concrete, not heavily oaked - Chablis is a good choice). And don't forget Rosé, as long as it's dry and has good acidity!
