Step-by-Step Guide to Cupping Bali Blue Moon Organic Specialty Coffee

Step 1: Gather Your Equipment

Freshly roasted Bali Blue Moon Organic specialty single origin coffee.
A quality grinder.
A digital scale.
Cupping bowls (small, round bowls work best).
Cupping spoons (or regular soup spoons).
Hot water (boiled and slightly cooled to around 200°F or 93°C).
Timer.
Notebook and pen for taking notes.
Step 2: Prepare the Coffee

Weigh out 12 grams of coffee beans for each cup.
Grind the beans to a coarse consistency, similar to sea salt.

Good afternoon, beautiful people!! I hope you're having the best day of your life! I'm always trying to be of service and after reading this recent work of mine, you should be a lot closer to having the best cup of specialty coffee you've ever had. Did you know that water makes up about 98% of your cup of coffee? It’s true! That being said, the quality of the water you use is paramount & can significantly impact the flavor and overall experience of your specialty coffee. I've developed a guide that I've posted below. We will dive deep into why water quality matters, how to optimize it, and what the pros and cons of various methods are; I'll also share my favorite water to use and where to get it from. Using our rare and exquisite Organic Bali Blue Moon specialty single origin as an example, you will see just how crucial the right water can be.

Why Water Quality Matters
Water is the primary solvent in coffee brewing, extracting flavors from the coffee grounds. The composition of your water - including its mineral content and purity - plays a vital role in this extraction process. Here's why:

Mineral Content: The right balance of minerals enhances the flavor of your coffee. Too many minerals can cause over-extraction, leading to bitter flavors, while too few can result in under-extraction, making your coffee taste flat and dull.

Purity: Chlorine, impurities, and contaminants can introduce off-flavors that detract from the natural taste of your coffee.

The Ideal Water Composition
For the best coffee brewing experience, the Specialty Coffee Association (SCA) recommends water with the following characteristics:

Calcium Hardness: 50-175 ppm
Total Alkalinity: 40 ppm
pH Level: 6.5-7.5
Total Dissolved Solids (TDS): 150-250 mg/L

Steps to Achieve Optimal Water Quality

Use Filtered Spring Water Contained in Glass Only: I love using Mountain Valley Spring Water in the 1L green glass bottles & purchase it at Publix or Kroger for $2-$3 a bottle. Since 1871, it has been bottled at the same spring in a remote valley in the Ouachita Mountains. Although there is a bit of room to play with, I believe Mtn. Valley contains the perfect amount of natural minerals to craft the most exceptional cup of specialty coffee and I will list them below.

Mountain Valley Spring Water Mineral Content:
Calcium: 67-72
Magnesium: 7.2-13
Potassium: 0.7-1.2
Total Dissolved Solids: 220-230
PH: 7.3-7.7

Why: Filters remove chlorine, sediment, and other impurities that can negatively affect taste. Water that is only contained in certified toxin-free glass is free from PFAS and other toxic forever chemicals that leak into the water from the plastic containers many companies use. These chemicals are also responsible for changing the taste of the water, especially if it is stored in the heat.

Pros: Easy to use, widely available, and cost-effective.

Cons: May not remove all minerals; regular replacement of filters is required.

Test Your Water:

Why: Understanding your water’s composition helps you adjust it to meet ideal standards.

How: Use a water testing kit to measure mineral content and pH levels.

Pros: Provides precise information, allowing for better adjustments.

Cons: Initial cost for kits and ongoing testing can be time-consuming.

Adjust Mineral Content:

Why: Balancing minerals like calcium and magnesium can enhance flavor extraction.

How: Use water additives or a remineralization filter to achieve the desired mineral balance. Or simply use my favorite, found at Publix or Kroger, Mountain Valley Spring Water in the 1L green GLASS bottles.

Pros: Tailors water specifically for coffee brewing, improving flavor.

Cons: Requires careful measurement and potential investment in equipment.

Maintain Optimal Temperature:

Why: Water temperature between 195°F and 205°F ensures proper extraction without burning the coffee.

How: Use a thermometer or a temperature-controlled kettle.

Pros: Consistent brewing results.

Cons: Requires additional equipment.

Pros and Cons of Various Water Sources

FILTERED Tap Water:

Pros: Convenient and cost-effective.
Cons: Often contains chlorine and varying mineral levels that can impact taste.
I do not suggest anyone located anywhere

Filtered Water:

Pros: Removes impurities and some unwanted minerals.
Cons: May not achieve ideal mineral balance.

Bottled Water:

Pros: Consistent quality and mineral content.
Cons: Expensive and environmentally unfriendly.

Distilled Water:

Pros: Pure and free from minerals.
Cons: Lacks minerals necessary for proper extraction, resulting in flat-tasting coffee.

1. Dialing in the Perfect Roast Profile

Step: We begin by dialing in the ideal roast profile using Ikawa sample roasters. This allows us to fine-tune the roasting process to highlight the unique characteristics of each batch of beans.

2. Scaling Up to 10KG Drum Roasters
