I found a rendition of this recipe on Gilbert’s site, but of course I had to make it my own! 😂 And let me tell you… it is SO good and absolutely perfect for summer! ☀️

Chicken sausage, juicy tomatoes, fresh spinach, balsamic, mozzarella, basil & pasta… what’s not to love?!

And Stephanie’s emergency substitution? 😂 I’ve even cut up string cheese when I’m desperate and craving this! It works in a pinch! 🙌🏼

🌽 From the Garden to the Griddle 🌽
Yesterday, Scooter and I picked some fresh corn, and today it ended up on our dinner table looking like THIS. 😍🌽
There’s just something different about eating food you picked yourself. Fresh from the field, straight to the kitchen, and turned into something the whole family can enjoy. That kind of food just tastes better. ❤️
I cooked the corn on the griddle for about 15 minutes, rotating it often to get those beautiful little charred spots. I sprayed it with butter as it cooked and seasoned it with salt and cracked pepper.
Once it came off the griddle, I added a little lime juice and dried cilantro, then slathered the whole cob with mayo, sprinkled it with elote seasoning and grated Parmesan (because sometimes you use what you have 😉), and finished it with fresh cilantro.
And y'all… it was GOOD. 😂
Sweet. Creamy. Buttery. Smoky. Tangy. A little spicy. And absolutely worth making again.
Cojita is traditional, but Parmesan is a perfectly good substitute if that's what you have on hand. That's how I like to cook—use what you've got, make it good, and feed the people you love. ❤️

🌽 There’s a little bit of magic in food from the garden. 🌱
I’ve been thinking lately about how incredibly thankful I am for this community—and especially for the farmers and gardeners who are willing to share the abundance of what they grow.
This basket of sweet corn was shared with us, and honestly… food just tastes different when you know where it came from. 💛
There’s something about corn picked from a garden, vegetables pulled straight from the dirt, tomatoes warmed by the summer sun, or a jar of something homemade sitting on your kitchen counter.
Maybe it’s the freshness.
Maybe it’s the work that went into growing it.
Or maybe it’s the kindness behind the person who says, “Here, take some.”
Whatever it is, garden-grown just has a little magic that you can't buy at the grocery store.
And because I love finding ways to turn a good harvest into something around the table, I thought I’d start sharing some of my favorite recipes from the garden here at Hill Creative Company. 🌽🥒🍅

Before Hill Co. by Stephanie was ever a business, I was just a mom trying to make my kids' birthdays feel magical.
I could never find invitations that matched what I had pictured in my head, so I made them myself. Every party had a theme, every little detail mattered, and creating something unique became one of my favorite parts.
I came across this old invitation today and it made me smile. I miss the days when tacos and bows were enough to make Evie absolutely giddy with excitement.
Those little moments are gone way too fast, but I'm so thankful I saved pieces of them.
Looking back, I guess Hill Co. started long before I ever knew it would.

If you're looking for an easy meal that feeds a crowd and never disappoints, this is it! We've been making this shrimp boil for years, and the secret is the Louisiana Crab, Shrimp & Crawfish Boil Seasoning. The longer it sits after cooking, the more flavor every bite gets.

One of my favorite tips? Don't throw away the broth! We save it to cook ramen, rice, or soups later. It's too good to waste.

There's a food truck that comes through every so often, and I've wanted to try their lobster rolls forever. But this season of life just doesn't leave room for spending that kind of money on one meal. 🦞
So I did what I usually do—I came home and started researching.
After a little experimenting, I found a budget-friendly version using langostino that gave us that buttery, seafood-roll craving without the food truck price tag. For about the cost of buying one meal from the truck, I was able to make four rolls plus a pan of steak fries for my family.
Are they exactly the same? Probably not. The food truck is still on my bucket list. But these have become one of our favorite summer treats, and they've impressed everyone I've made them for.
Sometimes the best recipes don't come from having more... They come from making the most of what you have.
