Swiss Bear proudly congratulates the City of New Bern, NC Government and New Bern Housing Authority on being awarded a $25 million HUD Choice Neighborhoods Initiative Grant!

This transformative investment represents an incredible opportunity for New Bern and the Greater Five Points community, supporting housing, neighborhood revitalization, economic opportunity, and quality of life for residents.

For Swiss Bear, this award is especially meaningful because the future of Downtown New Bern is closely connected to the future of the neighborhoods that surround it. Our partnership with the City and our work through the Downtown Master Plan are focused on creating a stronger, more connected downtown.

How was the decision made to take over the business? Were either of you working here at the time?

Lindsay: We were not working here, and we never talked about it. We just both knew. It was literally like, "When are you gonna be here, when are YOU gonna be here?" We didn't ask each other any questions. Everybody has asked us that. They're like, “Well, did you have to decide?” I was like, "No, it was what we were meant to do." I was in Atlanta running a design showroom, and I told the owner of the company what happened, and she said, "I'm gonna miss you." I didn't even have to tell her.

Winnie: I was living in New Bern, had only been back for a couple of years, working right down the street. So, I came a couple weeks later, and Lindsay was here a few months later, and we've been here for eight years. We both like managing things.

We had talked over the years, or at least with Dad, but we just never expected it to be so soon, and we also thought that we would learn from him. So that was a really hard part of having to come here, you know, after his passing and find little traces of him. But it was really crazy when we were preparing for our first staff meeting, of all days, we were going through this file, and I found a folder, and it said Staff Notes. It was in dad's handwriting, and they correlated with what we had already prepared to talk to our staff about, and it was so similar to what he used to talk to them about. It was kind of like a nod, and a pat, like you're doing something right, or your instincts are very similar, and so that was beautiful.

Lindsay: It's been in our mission to remain a neutral and positive place for people, because the world is so polarizing. We just go through so many seasons, and we've been through Covid, we've been through elections, we've been through hurricanes, we've been through so much, and we make it known to our customers that you can come here, and it is the safe space for everybody. We have people of all walks of life who approach us the same way, and I want that to continue to be that way. And a lot of business owners and people are very vocal when it comes to a lot of negativity, and I think we've just dedicated ourselves to say nothing or just be nice. You know, it's like the saying, if you don’t have anything nice to say, don’t say it at all, that's what we believe. Not because we don't have opinions, but because we love everybody.

What made you two take the leap and call Downtown New Bern home?

Mayte: I guess it was because of Covid. I went to culinary school, so it was like one of those ideas that I had, but I didn’t want it to be 24/7. When covid came, I started making macarons.

Edwin: She had never really made macarons, so she tried out a bunch of recipes; none of them really worked. And then she said, "All right, you know what? I'm gonna do it myself." She made her own recipe. So, these macarons, that's her secret formula. We originally wanted to open with just macarons, but I also couldn't find a good place to have coffee. I lived in Northern Italy for a few years, and I wanted Lavazza. So, you know, we played around with the idea for a little while. Then eventually, one day, we said, "You know what, let's just do it."

Mayte: He had no idea how to make coffee. I was making macarons. When we opened, we had nightmares. Like everybody had nightmares that we burned the stuff, or the coffee was not ready.

Edwin: And we said, "Alright, we're gonna open Saturday. What's the worst thing to happen? I'm sure not that many people are excited to come in." We had a line out the door. Trying to figure out how to make the coffees. We kept running out of pastries. People got angry that they couldn't get stuff. We're like guys, we're making this from scratch every day. Then we eventually got the hang of it. We stopped running out of things, extended our hours, hired people. We just kept going. And, you know, I perfected my craft for coffee, she perfected her craft for pastries.

Mayte: I love to talk to people. There’s a lot of expats that come here just for the coffee and for the European desserts that they cannot find. But the coffee is the main thing. When they look in New Bern, they look for espresso. We have the regulars that have been coming for four years, every day -- we know what they want. We have salsa classes; we have baking classes... I think it's just a social place. We don't try to be pretentious or anything. We just let everyone come on in.
