Plaster is troweled on by hand, so it has a slightly different texture than a machine-smooth drywall panel. Patch an old Suffolk County wall with sheetrock and that difference shows up in raking light, no matter how well it's painted.

Fresh joint compound is thirsty. It pulls the paint in instead of letting it sit on the surface, so it dries flatter and duller than the surrounding wall. Painters call it flashing, and no amount of color matching fixes it.
