A small moment of gratitude from your resident orca chef 🐳👨‍🍳

What started as one kitchen, a big idea, and a slightly concerning amount of fish… is now growing again. We’re expanding our office and opening Location #3.

It’s easy to joke (and I will, don’t worry), but this one feels special. Every late night, every rushed service, every “we’ll figure it out”—it all led here.

Location #3 means more people, more creativity, and more chances to do what we love (with a bit more elbow room, finally).

I’ll still be gliding through the kitchen, keeping an eye on things, and yes— encouraging your plating from across the room. Some things never change.

Thanks for being part of the journey. Let’s keep building.

👨‍🍳🌊 Chef’s Log…

Out on the street, it’s a different kind of kitchen.

No burners. No ovens. Just pressure, people, and performance.

I’m not looking for just anyone — I’m recruiting sales killers to join the Wave Closers.

This is for the ones who can:
🔥 Walk up with confidence
🔥 Handle rejection and keep moving
🔥 Close the deal when it counts

Out here, every conversation is a chance. Every moment is a test. And only a few know how to ride the wave all the way to the finish.

If you’ve got the energy, the hustle, and the mindset…
Step up and prove it.

Join the Wave Closers 🌊

Hey-Wallie here. Yeah, the orca in the chef coat.
Don’t let the smile fool you... this kitchen runs on more than good vibes and butter.
Out there, you see a meal. In here, it’s a relay race.
A host sets the tone before you even sit. A server reads your mood before you say a word. Line cooks fire dishes in perfect rhythm. Dishwashers keep the whole engine from stalling. Nobody’s the star, but everyone matters-because if one of us slips, the whole experience does too.
That’s hospitality.
It’s showing up when your feet ache. It’s remembering a regular’s favorite order. It’s fixing a mistake before it reaches the table. It’s choosing patience, care, and pride-over and over again-no matter how busy the night gets.
People think we’re just “serving food.” Nah. We’re creating moments. First dates. Celebrations.
Quiet dinners after long days. Little memories that stick longer than the taste of the meal. And more…….. be a WaveCloser!

Day one in Wallie’s kitchen 🐋👨‍🍳

We talk about Wave Closers.

Anyone can ride the wave when it’s rising—but the real ones finish it when it starts to fall. That’s where outcomes are decided.

Like Napoleon Hill taught, a Positive Mental Attitude isn’t just a feeling—it’s a choice. Especially when energy dips and negativity creeps in.

Wave Closers don’t mirror that.
They override it.

Stay Fairly Even: ignore the negativity, reciprocate positivity, and bring the right energy when it matters most.

That’s how you finish strong.
