Cooking Class: How to Season Lamb Simply

Lamb has incredible natural flavor so you donโ€™t need to overthink it.

Start simple:
โœจ Kosher salt
โœจ Fresh cracked pepper
โœจ Olive oil
โœจ Garlic
โœจ Rosemary or thyme

Thatโ€™s it.

Let the richness of the lamb shine. You can always build from there with cumin, coriander, mint, or smoked paprika. But simple is often best.

Looking for good NSIP genetics to match those ewes youโ€™ve bought? Here is the place!

The NSIP Center of the Nation Sale will take place on Saturday, July 25th at the Clay County Fairgrounds in Spencer, Iowa. This sale is specifically for sheep currently enrolled in the National Sheep Improvement Program.

The sale will be managed by Bret Oelke with Heartland Livestock Services, and online bidding will be available through DVAuction.com. The sale auctioneer will be Ryan Livermont from Pipestone.

Entries will be submitted and posted for viewing on PLAuctions.live.

Sheep in this sale are expected to be eligible for registration within the breed they represent, if applicable. Registration papers will NOT be required to sell. However, we do ask that at time of entry, consignors make it clear if your lots will be Registered, Eligible to be Registered or will sell without registration. Registration status will be clearly marked on the sale order and may also be announced at the auction block during the sale to avoid any confusion with purchasers.

The terms of the sale are $30 per head entry fee and 12% commission of selling price. Please make checks payable to Heartland Livestock Services and mail to:

Certificates of Veterinary Inspection will be required. If you have rams over six months of age on sale day, they require a negative bovis test on your CVI to sell into states that require that test. These states include most of the western states and the state of Missouri. We will be able to make copies of your CVI onsite, as each ram will need to have a copy of the original for our files. We will have a Vet onsite sale day to write papers for the buyers.
