🍝 Three Simple Fresh Pasta Doughs 🍝
Egg & Flour Dough
Rich, silky, and perfect for ribbons or stuffed shapes.
Ingredients:
• 2 cups bread flour
• 4 large eggs (room temp)
• 1/4 tsp salt
How to make it:
1. Combine flour and salt; create a well and add eggs.
2. Whisk the eggs, pulling flour in gradually.
3. Knead 15–20 minutes until smooth, adding flour as needed.
4. Rest the dough, covered, for 30 minutes to 2 hours.
5. Cut into 4 pieces and roll each one very thin.
6. Stack, slice, and shape as you like.
7. Boil in salted water for 3–5 minutes.

Water & Flour Dough (No Eggs)
A rustic, egg‑free dough with great bite.
Ingredients:
• 2 cups all‑purpose or semolina flour
• 1/2 cup warm water
• 1/4–1/2 tsp salt
How to make it:
1. Mix flour, water, and salt into a dough.
2. Knead 3–5 minutes, adding water if dry.
3. Rest 30 minutes.
4. Roll thin and cut into noodles or shapes.
5. Boil 6–7 minutes.

Egg, Flour & Olive Oil Dough
Soft, supple dough with a touch of richness.
Ingredients:
• 2 cups all‑purpose flour
• 3 large eggs
• 1/2 tsp sea salt
• 1/2 tbsp olive oil
How to make it:
1. Make a flour mound with a center well.
2. Add eggs, oil, and salt.
3. Mix with a fork, then knead 8–10 minutes.
4. Rest 30 minutes.
5. Roll thin with a roller or pasta machine.
6. Dust lightly with flour and cut.
7. Boil 1–2 minutes.
