On we’re celebrating every kind of taco! From deep fried and cabbage-topped fish tacos in Baja California, to pork and pineapple tacos al pastor in Mexico City, to the small steamed tacos de canasta that are popular in Northern Mexico, to the sweet and spicy cochinita pibil tacos garnished with purple onions in Yucatan. 🌽Mexican cuisine is renowned worldwide for its rich flavors and fresh ingredients, and although recipes vary throughout the country there are a few ingredients that show up consistently: avocado, corn, beans, and tomato. Corn, for example, is used to make tortillas, tamales, and even to make beverages like atole con champurrado!

Dia de Los Mu***os, or Day of the Dead, is a day that commemorates death and celebrates life, and originated in Mexico. Colorful shrines to honor the deceased, known as ‘ofrendas’, are placed in homes, churches, schools and even squares in the weeks leading up to November 1st and 2nd. The “calaveras,” or skulls, are the most common symbol for this celebration and are often seen ornately decorated with flowers, animals or other decorations.

🇲🇽 Mexico’s war for independence from Spain lasted for over 11 years and on September 16th, 1810 – with the historic battle cry “VIVA MEXICO” – the nation declared its own Independence Day. Throughout Mexico the day is celebrated with massive street parades, mariachi performances, traditional folk dancing, fireworks, many signature dishes, and rodeos. You can hear “The Cry of Dolores,” the famous speech given by Hidalgo to fight for independence, throughout the city streets.
So what are the signature dishes of Mexican Independence Day? Pozole, menudo, birria de Borrego, queso fundido and especially Chiles en Nogada with its cream sauce, parsley and poblano chiles that give the dish the same colors as the Mexican flag.
