Did I ever tell you. When you request a beef for me to cook, I only choose Black Angus, why you ask? Well for one it's a very tender meat, and even though it's not a prime cut, it still has amazing marbling. Well cheers to the party who will be receiving this amazing smoked meat.

Today I cooked with pecan, and man it makes a killer wood for beef, definitely going to use more often if I can find the wood.

Timing couldn't have been more perfect for everything.

Temp was holding good @215° I couldn't be any happier than the people who ate beside me.

Sorry no picture of brisket, it was not technically mine. But maybe they will post a picture once they see this post.
