Just popping in to talk a little about matcha (抹茶) and life.

We really love and are proud of the matcha we serve at our shop, and we’ve also come to deeply appreciate the art and history behind the greater practice of it. The story goes that a Buddhist monk first introduced the Chinese method of powdered tea to Japan in the 12th century. As matcha began to evolve and gain prominence in Japanese culture, it became more and more intertwined with the concept of intentional living through traditions such as tea ceremonies. In the modern era, this intentionality is carried into smaller, daily tasks, such as starting your day with a matcha (or coffee!) routine. By being fully present for a cup of tea, the hope is that you’re preparing yourself to be fully present in your life.

In Japanese, there’s a word called ikigai (生き甲斐) that means a reason for being—a reason to jump out of bed every morning, a reason that makes life worthwhile. There’s no direct translation in English. What’s so fascinating about ikigai is that researchers say there might be a connection between the existence of the word and the fact that certain people groups in Japan have the longest life expectancies in the world.

What’s your ikigai today? If you’re not sure yet, that’s okay. Maybe you can start with a cup of matcha. :)

We love our neighbors, we love our city, and we are in solidarity with all immigrants. As a small business, we’ve decided to open today to support a team that depends on us and to provide a space of warmth and comfort for our community.

Meet our first ever coffee from Indonesia, available all throughout January on bar at our shop and as whole beans. This natural offering comes from the Kintamani highlands of Bali, sitting atop a large volcanic plateau. Bali farmers have always avoided heavy chemical and pesticide use in their coffee farming, partially because their infrastructure for coffee relies on smaller, family-run cooperatives—not massive, more corporate plantations. The history of coffee in Bali is quite interesting and well worth reading up on if you have the chance.

On our part, we’re ecstatic to share a coffee from an origin that many of you have most likely never tried. This coffee is quite distinct, and we taste notes of strawberry ice cream, membrillo, and kiwi.

One of our goals as an independent roaster is to introduce you all to a diverse range of coffee origins. In 2025, along with some of our usual favorites from Colombia, Ethiopia, Rwanda, and Guatemala, we roasted new coffees from Burundi, Tanzania, and Costa Rica. We offered some incredible naturals, and we had the opportunity to source from an all-women coffee cooperative for the first time.

As we continue into 2026, we hope you’ll be able to appreciate the intention and care that goes behind choosing each month’s coffee.

Merry Christmas ⭐️ We’re celebrating five years of Persimmon today and reflecting on our special little journey.

We launched our business on Christmas Day in 2020 as a gift to our loved ones. What began as a pandemic passion project slowly transformed into a mobile pop-up that we operated for over a year and a half with our trusty Rocket, from Queen Village to University City. Shout-outs to and .coffee 🧡 We still laugh about how we somehow managed to run our very first one in below-freezing weather with two Zojirushi carafes of drip coffee and a small space heater to defrost our toes. We eventually opened our very own café in the summer of 2022, backed by the love and support of a gracious community around us.

Transparently, we’ve endured some pretty tough times since then… moments when we truly wondered if it was possible to keep Persimmon going. But our dear friends and family came through for us again, and again, and again. So we’re here today, standing stronger than ever. We recently shared with each other about what motivates us and how we’ll continue to build Persimmon, and we realized that the people we serve are at the core of why we are in this business. To be able to serve our team, our customers, and our Fishtown neighbors well—that’s what matters most to us, and what will give us purpose as we navigate all that’s to come. Our journey here has been nothing short of a miracle. Persimmon started as a gift to others, and it has now become a gift to us.

We’ll end with this: every day, we’re inspired by our team. By their diligence, humility, expertise, and contagious compassion for every single person who steps into our space, regardless of who they are. To Bryant, Ashton, Brian, and everyone else who’s helped us stay afloat—thank you, from the bottom of our hearts. You keep us going.
