Your gas regulator should look like the left, not the right.

When the vent gets packed with grease, it can’t breathe. That restricts gas volume, causes weak flames, and makes pilots randomly blow out.

This gets misdiagnosed as “bad pilots” or “bad valves” all the time. It’s not. It’s airflow.

Clean vent = stable equipment.
Greasy vent = service call roulette.

This unit looked done. Burned wiring, cooked components, no operation.
Most people would’ve scrapped it.

Instead, I traced the failure, replaced the damaged wiring and solenoid, corrected the root cause, and brought it safely back online.

Don’t give up on your equipment just because it looks bad.
A proper repair can save thousands and keep your kitchen running.

If it heats, cooks, or moves air in a commercial kitchen and it’s acting up, this is what I do.

This convection oven was down for 2 years over a bad power switch.
Simple fix. Proper test. Back in service.

Philly kitchens: if your equipment is dead, acting weird, or written off as “not worth fixing,” get a second opinion.

When a flattop won’t get hot enough, it’s rarely “just the gas.”

This unit was underheating because the thermostat’s capillary tube snapped — once that happens, the control can’t sense temperature correctly, so the burners never stay on long enough.

Small failure. Big performance problem.

Convection oven sounding like a jet engine?
