First post in a while... I have been cooking & creating - simply just not posting. Tonight is different.

1st attempt at my Mexican Pepper Soup - a distant cousin of the more famous French Onion Soup.

Peppers (Sweet & Hot), Pork Stock from base, Tequila, Tortilla Strips, and Chihuahua cheese.

Friday Comfort Food...

Wasn't sure what I was going to fix for dinner - but knew I had to use some avocados. So I made avocado fries again. Each time I make them I learn something new about preparing the fries to a deliver consistent taste-bud stimulating experience.

The grilled pork chop was tender & Spanish rice flavorful. A friend of mine requested a photo taken dowaward view... what do you think?

Day 14" of Snow... LOL

My Chef Instructor (Lucy House CCC - may she RIP) always got on me for my misc en place and that I worked messy. Some things never change...

Here is my kitchen tonight.
1.) Finished Honey-Orange Ginger Pork Stir-fry with rice&

2.) Twist on Spaghetti Carbonara with Pepperoni instead of Bacon (had no bacon)

3.) In the ziploc bag leftover ham, onions, pasta, carrots and a parmesan cheese will become my lunch for tomorrow.

4.) Finally, a little scrap of pork tenderloin that I ended tossing with rice and salsa verde.

Day # 32 - Chicken Pepparmesan

I am never sure what I am going to make for dinner... I simply pull some meat from the freezer and hope to hell a Frick'N good idea comes to me. Tonight's idea had the potential to POP but fell a little short. :( The idea though is definitely one I will use again.

Chicken Breast breaded with finely grounded breadcrumbs, parmesan cheese and, wait for it... PEPPERONI!

Sloppy Joses (Taco Meat w/Chorizo & Bacon layered between corn tortillas & cheese) - I actually used the Moring Star Farms Chorizo & was quite impressed.
