Another great way to add Chimichurri seasoning to your life!
Summer Squash Lasagna Recipe 🍅
Ingredients:
2 larger summer squash, grilled to remove excess water
2 cups marinara (check our previous post for the recipe!)
1 pound ground beef
2 tablespoons Chimichurri seasoning (our signature blend)
1 1/2 cups ricotta cheese
1 cup mozzarella cheese
1/2 cup grated Parmesan cheese
Olive oil
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef until browned. Drain excess fat and set aside.
Mix the ricotta cheese with half of the Chimichurri seasoning, and season with salt and pepper.
In a baking dish, spread a thin layer of marinara sauce to prevent sticking.
Layer grilled summer squash slices to cover the bottom of the dish.
Spread half of the ricotta mixture over the squash.
Sprinkle half of the browned ground beef on top of the ricotta mixture.
Drizzle with olive oil and sprinkle some Chimichurri seasoning.
Add a layer of marinara sauce, followed by a layer of mozzarella cheese.
Repeat the layers - summer squash, ricotta mixture, ground beef, Chimichurri seasoning, marinara sauce, and mozzarella cheese.
For the final layer, top with summer squash, marinara sauce, and the grated Parmesan cheese.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Let it cool slightly before slicing and serving.
