By popular demand we’re now offering ‘bulk’ grind sizing for those who want to do their own homemade sausage/jerky/smokies at home. Remember to request with your cut sheet at drop off. 5/10/15lb vacuum sealed packs. Since several have asked, yes, that is just ONE BIG cow elk with only backstraps into steaks and the rest burger in the freezer above.

We currently only offer ‘one’ breakfast/wet sausage. Back by popular demand we’re again offering the one and only Witts 110 classic Southern sausage flavor. Witts #110 blends savory spices with a touch of sweetness to make delicious pork sausage right at home. Excellent with elk, moose and deer alike. If you have someone in the family that does not enjoy venison, try some, and if they hate it i’ll get you some money back. Aka…they won’t hate it 😂

Perfect for breakfast links, patties, biscuits and gravy or your own signature sausage recipe. Good luck out there!

Saving you money!! Since shipping and supplies have gotten wildly out of hand and continue to climb, one way to keep your mount cost down is a whirlwind mad dash trip to Lebanon Oregon to the form distributor! Shipping of a $300 form can cost anywhere from 25-40% additional in shipping! 😡 So how much can Expedition hold? EXACTLY $5,346 worth of forms, eyes, ears and accessories! Not a single one more could fit and people on Oregon seem genuinely confused when a gigantic bison is tied down on the back basket! 😂 Such a great adventure 4AM to 11PM with Natalie! Now back to work!

WILD GAME PROCESSING:

August 1st is upon us folks!! Meaning early cow season is here. The meat locker is on and running cold at 37. We’ve expanded this year and we’re ready to roll!

As we’re getting some calls inquiring I just wanted to spread the word here - Forgive the long post but it saves me from longer phone calls in the coming months. The meat locker will be open tomorrow and we’ll be cutting as soon as they’re aged.

FAQ on our services:

We offer deer, elk and moose processing for flat rate processing in addition to all taxidermy services. No bears. Wild game ONLY. No domestic cutting or storing.

Q - What does the flat rate cover?

A - We do a ‘flat rate’ for all processing services to keep it simple. It covers intake with your custom cut sheet filled out, hanging to age, cutting, wrapping (plastic wrap first then butcher paper), grinding, stuffing and pickup as well as disposal services. No sneaky add ons.

We offer a breakfast/wet sausage. No other special meats/jerky.

Q - Do you allow people to just hang the meat so they can butcher it themselves?

A - It’s case by case. Depending on current capacity as long as it is COOL, DRY and CLEAN we do ‘hang only’ daily rates that depend on how much rail space in your animal takes inside the lockers. Rates start at $15 daily for deer. I do however recommend you look at our flat rate processing fees as an option, but you are welcome to do it on your own.

Q - How do I know that I will get all my own meat back?

A - You are, in fact, guaranteed to get your own meat as every animal is done one at a time. After aging your harvest is brought from the locker directly to processing where it will be cut, ground, wrapped, and then taken directly to its own freezer space with your tag and cut sheet affixed. Processing equipment and tools are cleaned between each animal for sanitation. REPEAT!

I get every peice of consumable meat as if it were mine. No exceptions. Should you prefer references or pictures to confirm as much, please reach out! We have MANY.

Q - How do I get it to you, and what if it’s at night?!

A - We require you contact us BEFORE drop off to ensure we are here and get an appointment time. (208-874-2163) Hunting isn’t 8-5 so neither are we. We’re nearly always available as needed for the next 4 months every year. If you call me at midnight saying you have to drop off an elk then we make it work! Losing your harvest isn’t an option, but I might charge a small fee for ruining my beauty sleep 😂

Three RULES of Game Meat and Taxidermy Handling - Remember C.D.C.

This applies for taxidermy as well! Many folks bring their whole harvest to process then euro/tan/mount etc.

COOL - Get the hide off to let it beathe unless you’re close or its cold and want us to skin it. Pack it/around it with more ice than you think you should. The locker stays at ~37 degrees once here. As soon as that heart stops beating that animal begins decomposing. I personally wouldn’t risk a shot in the AM, but thats me. We can’t control what happens before it’s here or after it leaves, but we turned one away quartered literally hot to the touch last August. Too risky. It’s going to be quite warm at the start of August.

DRY - Do NOT leave meat or the hide to soak in cold ice water in a cooler. Prevent it from becoming waterlogged and attracting bacteria. Plastic or cardboard or both layers between water/ice and your meat. We run the dehumidifier to keep the locker around 85% rh for optimal aging without molding or drying out

CLEAN - Breathable game/homemade bags recommended. Its going to be on your dinner table, not ours. Use tarps under it, etc. We skin many animals on site for our clients. No charge if you do a taxidermy service for us and I don’t mind showing people how to skin for taxidermy specifically.

We unfortunately do turn away a few each season for problems with the three above.

HAPPY HUNTING!

ROAD TRIP!!!!! It’s TIME!!! Leaving tomorrow at 3AM for the tannery everyone! ETA 3PM before they close and a quick turn pit stop to be back ETA ~3AM Saturday!

ALL fall 2025 hides/capes are finally done! As a reminder this is really the only part I ‘don’t’ control time wise. Sorry, don’t hate me for the delay. I know everyone’s anxious, but their quality is worth the wait for your mounts and I can’t speed it up.

After arrival, I go in order as they came in from August on, so I’ll be in touch with you as your mount comes up to pick your forms/details/etc!

This one was tricky!
I bet theres a load of these moo cow heads laying around outside/in old barns/shops/half buried/rotted out there. 😂

This one was a doozy. BUT…it can likely be fixed if you want a sharp looking display! Dark brown is this before and after and buckskin was done from the fall. If you take one to be butchered we can tan and do skulls for folks!

SPEED TWINKIES!!

We don’t see many of these goofy goats very often up here. They’re really beautiful critters! So many unique features that no other North American big game have.

Congrats to Joe DeGravio on harvesting this beautiful antelope buck during his south Idaho special draw hunt! I was really honored that you took me along Joe.

If you’ve never been hunting for antelope, Idaho is a automatic draw for archery in some of the units down south so you can get a tag every other year. BUT buyer beware that is probably one of the most frustrating hunts you will ever do. If folks think that Whitetail are skittish and spazzy you haven’t seen a tweaker speed tw***ie bolt when a piece of grass blows wrong, or a butterfly flies by! 😂 and it’s not a quick jog 100 feet away to look back, you will need to pull out the spotting scope to see where they stop a mile away.

It’s 90+ degrees sitting in a camo black interior blind alone on a water trough in a battle of attrition waiting for one thirsty enough to brave you’re distance. Aka, good luck! 😂

I’ve heard, ‘Oh I can pattern them.’ Nope…zero rhythm or reason to these little crackheads! Congrats again Joe!

Controlled hunt draw results for deer, elk, pronghorn, fall black bear, fall turkey, and swan controlled hunt drawings are now available at GoOutdoorsIdaho.com.

Our licensing system will be experiencing very high volume as hunters log in to check their results. To help move customers through the system as quickly as possible, a virtual line will be turned on for the first few hours that results are available.

Emails are being sent in batches, so just because your hunting buddy received an email before you, it doesn’t mean yours isn’t coming.

We will NOT be sending any postcards, so hunters are encouraged to review their email to verify their results or log into their online account at GoOutdoorsIdaho.com.
