Excited to incorporate more Homemade Asian (inspired) food into my life. This is obviously the shortcut and likely not as authentic as preferred however, this turned out delicious.

Green Curry chicken with carrots, onion and shiitake mushroom. Rice. Mint & Cilantro.

I frequently make pork or chicken adobo now as an ongoing effort to reclaim my ethnic identity as a Filipino American. I didn’t grow up eating this at home. Only at my grandparents. I can proudly say I am American but aside from my brown skin much of my island representation was lost in generational immigration. I am working hard to continue building a verbal narrative around this. It hasn’t been easy to be honest. I’ve shared this with a few other Filipino friends of mine but if you too are Filipino American and on the journey to reclaim your Filipino side I’d love to hear from you and how that’s been. Food is a great place to start that conversation. Let it be.

Tomorrow is my birthday and we’re making a Filipino Mai Tai. Inspired by the 1944 Trader Vics recipe we’ve replaced the main ingredients with Filipino flavors.

1 oz Tanduay Asian Gold Rum
1 oz Myers rum
1 oz fresh Calemansi juice
1/2 oz Orgeat syrup
1/2 oz Triple sec (Orange curaçao)
1/4 oz Bay leaf Simple syrup

Shake ingredients with ice. Pour unstrained and garnish with spent calemansi and mint.

I’ve discussed with a few friends how this may be my favorite Trader Joe’s frozen item. I’m not a huge frozen food fan but, this turns out pretty good. Also, check the news as it looks like Trader Joe’s is also finally responding to the fact it’s use of “Trader Mings, Trader Jose, and Trader Giotto” is racial misappropriation. - In this video I use Sesame Oil, Peanut Oil, Garden fresh Chilis, garlic and chives as additions you how I make this. Enjoy.
