New summer favorite! Grab our best spring mix and top it with a 2:3 ratio red wine vinegar:olive oil. Add cucumbers, yellow pepper and red onion. Top with either grilled chicken or roasted chickpeas (or both) and toss a bit of feta on there. We promise you won’t be disappointed.

One of my favorite things about a good salad is the versatility. Once you find a favorite dressing (Pollan family dressing from a previous shared recipe) and use the best spring mix, you can have some fun with the variations. I added my usual h**p and flax seeds, fresh carrot and chicken with citrus, garlic and turmeric seasoning. Summer is for salads!
