Named a Top 20 Winery to Visit by the San Francisco Chronicle. Tres Sabores ("three tastes") was founded in 1999 by winemaker and owner, Julie Johnson, to explore the 'three savory flavors' in every glass of wine: the taste of the vine, the terroir, and the good company around the table. The property is filled with growing history as olives and vines were planted here over a century ago. Today, the farm is a certified organic (CCOF) grower of Cabernet, Zinfandel, Petite Sirah, and Petit Verdot, pomegranates, Meyer lemons, and Olives. We also raise Guinea fowl and sheep who serve not only as lawn mowers and the mobile fertilization team for the ranch but also 'go to market' and are served in some of the finest farm to table restaurants in the Bay Area. Meet Mauricio - our Hero of Harvest!!

Called with an emergency late on a Tuesday night…the press had gone down and we needed to press grapes at the crack of dawn! He showed up very early the next day, did the fix and saved the day!

Exploring new waters and new w**e varieties!

A new planting of Assyrtiko in the Carneros (!)
Quickly became Assyrtiko in Amphora (!) here at
Tres Sabores.

It’s a bit cheeky, of course, but ¿why not? make a w**e native to Santorini when our ZAP sailing on Windstar next April will be making a stop on that very island (hoping to find lots of this sleek, aromatic, line dancing, sparkle-ball, excellent-with-seafood-w**e to sip on).

At first, we said—we have enough ‘unknown’ varieties in the cellar! But then as those who know us might have expected, we both woke up in the middle of the night and found ourselves working out how to make it happen –so Voila!

Happy to report that a very entrancing Assyrtiko has been made, is resting in its ancient clay vessel, and is getting ready to launch in the spring. Journal entry JEV JAJ 10.7.26
