Now here's a delicious holiday treat to try out on your friends & family... Shakshuka! (No, we didn't sneeze).
A Moroccan style tomato sauce that you can serve for ANY meal. Wyatt Hospitality Consultants just canned up the flavors of Morocco for Stone Terrace to use for their breakfasts & we would love to share our recipe with you....

SHAKSHUKA

Ingredients:
1 tbsp olive oil
1/2 medium brown or white onion, peeled and diced
2 clove garlic, minced
1 medium green or red bell pepper, chopped
4 cups ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes
2 tbsp tomato paste
2 tsp chili powder (mild)
2 tsp cumin
2 tsp paprika
Pinch of cayenne pepper (or more to taste-- spicy!)
Sugar, to taste)
Salt and pepper to taste
5-6 eggs
1/2 tbsp fresh chopped parsley (optional, for garnish)
Servings: 5-6

Method:

*Heat oven to 375 degrees.
*Heat oil in a large skillet over medium-low heat. Add onion and bell pepper. Cook gently until very soft, about 20 minutes.
*Add garlic and cook until tender, 1 to 2 minutes; stir in cumin, chili powder, paprika and cayenne, and cook 1 minute.
* Pour in tomatoes and season with 3/4 teaspoon salt and 1/4 teaspoon pepper; simmer until tomatoes have thickened, about 20-30 minutes. Add sugar to taste.
Gently crack eggs into skillet over tomatoes. Season with salt and pepper. Transfer skillet to oven and bake until eggs are just set, 7 to 10 minutes. Sprinkle with parsley and serve with harissa.
