Before Gladys & I built the winery, in 2000, we had been making non-commercial wines since 1969. In those early years, I made a fair amount of PORT wines and I have a closet with over 10 cases of Port wine. We have opened and consumed most of the earlier wines(Ports) but we hosted dinner for our friends last night and two nights prior to last night I opened and decanted 2 bottles of 1995 Port made from Cabernet Sauvignon. Yep, you read that correctly, Cab Sav. I would be willing to bet serious money that it was the only Port ever made from Cabernet Sauvignon. It was fabulous with 24 years of bottle aging, there was a large amount of settlement, tartrates & color pigments that had precipitated out. It exhibited aromas of cherries and strawberries with a long soft finish of just a hint of mint and cigar box. Wow! I am sure these two bottle's brethren in my closet are good for a minimum of 25 more years!
