Malolactic fermentation produces some genuinely great wines. 🍷
The rich, buttery style it creates has a loyal following, and there's nothing wrong with that. Most people just don't know the other style exists.
AJA's Chardonnay skips it entirely. Persimmon, lemon, citrus, caramel. No butter.

Not all "off" wine is bad wine. Some of it just needs air. 🍷
VA, TCA, Brett, oxidation, reduction — once you know what to smell for, wine starts making a lot more sense. And some of those so-called flaws? People seek them out on purpose.
